The best way to learn about a culture is through the local food! Cachupa is the national dish and a must try when visiting the Cape Verdean islands. This cooking class will connect you with the local people and is a great experience to learn about their habits. 


You'll start the cooking class in a local area of Mindelo where you'll meet the family from Santo Antao island. You'll discover all sorts of new vegetables and find out how the locals cook. Begin with cutting vegetables, prepare fish, meat and wash corn and beans. While the ingredients are simmering it's time for the city tour. You'll explore the streetmarkets where the cahcupa ingredients are sold and visit the lively area Ribeira Bote. Life here is different than in the regular city centre and shows the authentic Cape Verde. 


Time to head back, plate the meals and enjoy a tasty, homemade Cachupa!

Origin of Cachupa

Cachupa is a traditional dish from Cape Verde, often considered the country's national dish. It's a thick, slow-cooked stew made with corn, beans, vegetables, and sometimes meat or fish. There are two main types: cachupa rica (rich) and cachupa pobre (poor).


Cachupa is more than food; it’s a part of Cape Verdean culture and hospitality. It's often made for special occasions and family gatherings. It can be eaten at any meal. Leftovers are often fried with a bit of oil, onions, and sometimes eggs, this is called Cachupa Guisada.


Ingredients 
  • Corn: The main ingredient, giving the dish its unique texture.

  • Beans: Often includes kidney beans, lima beans, or other types.

  • Vegetables: Common ones are sweet potatoes, cassava, squash, and green bananas.

  • Meat: Cachupa rica usually has pork, chorizo, beef, or chicken. Fish can also be used.

  • Spices: Garlic, onions, bay leaves, and paprika, along with salt and pepper.


Cachupa Rica: Made with a mix of meats or fish, making it richer.

Cachupa Pobre: A simpler version with fewer or cheaper ingredients.
